Register for the 22-week Culinary Apprenticeship Certificate.

If you have a passion for the food industry, our Culinary Apprenticeship Certificate program is for you. This innovative and intense training will get you started on a rewarding career in the culinary industry. Whether you dream of putting on large catering events or crafting unique gourmet dinners in a fine dining establishment, we can give you the background you need to make it happen.

The Culinary Apprenticeship Certificate is a 3-month intense program designed for aspiring culinary professionals with a passion for food who desire something more than the traditional, classroom-based culinary education program. You will work hands-on in the kitchens of accomplished professional chefs who will provide the tools needed to succeed in the hospitality industry.

Prerequisites

Working knowledge of computers and access to a computer and the Internet are required.

Students are also required to pass a background check, sign a waiver of liability and show proof of health insurance.

Location

Classes will be held at KSU Center, primarily in our professional catering kitchen classroom.

Fresh Courses On The Menu

  • ServSafe Exam Prep and Intro to Knife Skills

  • Soups (consommé, broth, and purée), sauce, and sandwiches

  • Sauce and pasta (dry vs. fresh pasta), gnocchi, and potatoes

  • Dry heat cooking

  • Poultry fabrication and moist heat cooking (steamed, shallow poach, and deep poach)

  • Combination cooking methods: stewing and braising, veal shank

  • Garde manger basics

  • Whole beef tenderloin

  • Cookies, cupcakes, and frosting

  • Pork loin roast

  • Beef strip loin roast

  • Menu planning and nutrition

  • Seafood: salmon, lobster, and clams

  • Cooking eggs, hollandaise, breakfast meats, and grinding meats

  • Cost control

  • Baking and pastry basics

  • Lamb leg roast

Each student is required to have:

  • Chef’s knife (not required on the first night of class)
  • Black non-skid shoes
  • Black chef pants
  • Food thermometer
  • Coverage for any associated transportation and parking costs

Recommended items:

  • Small notebook and pen set to keep in your chef coat pocket

Additional details:

  • These supplies are at the expense of the student.
  • Chef coats and textbooks are provided.

Apprenticeship Sites

Your apprenticeships will consist of approximately 16-20 hours per week in rotation between several prestigious venues.*

Culinary Apprenticeship Certificate Program

By completing 240 hours of apprenticeship work divided into three different rotations, you will gain hands-on experience in a variety of food service environments. Working 80 hours at each location, you will make important connections in the restaurant industry and gain valuable experience for your resume.

Note: Student is responsible for transportation to apprenticeship sites, which are all located within a 1-hour drive of the KSU campus. Student is also responsible for transportation costs such as parking.

 

Richard Matthews

After working in public administration for 10 years, Chef Rich Matthews did his version of running off to join the circus and enrolled in the Culinary Institute of America in Hyde Park, New York. After earning his degree in Culinary Arts, he gained the majority of his industry experience working in large hotels in the Hudson Valley area of New York before moving to work in hotels in Fort Lauderdale. Most of his industry experience is from working in the catering and banquets functions of hotels before assuming leadership responsibilities. He has also been part of culinary teams feeding thousands of spectators attending the Kentucky Derby and the Ryder Cup Golf Tournament as well as the Fort Lauderdale International Boat Show. Chef Matthews won a gold medal at the Société Culinaire Philanthropique in New York City in 2004.
