If you have a passion for the food industry, our Culinary Apprenticeship Certificate program is for you. This innovative and intense training will get you started on a rewarding career in the culinary industry. Whether you dream of putting on large catering events or crafting unique gourmet dinners in a fine dining establishment, we can give you the background you need to make it happen.
The Culinary Apprenticeship Certificate is a 3-month intense program designed for aspiring culinary professionals with a passion for food who desire something more than the traditional, classroom-based culinary education program. You will work hands-on in the kitchens of accomplished professional chefs who will provide the tools needed to succeed in the hospitality industry.
Prerequisites
Working knowledge of computers and access to a laptop or desktop computer and the Internet are required.
Students are also required to pass a background check, sign a waiver of liability and show proof of health insurance.
Location
Classes will be held at KSU Center, primarily in our professional catering kitchen classroom.
What You’ll Learn
- Sanitation basics while preparing for the ServSafe® exam
- Industry tools, equipment and food science
- Knife skills
- Dry and moist heat cooking methods
- How to make stocks, soups and sauces
- Meat, poultry, fruits, vegetables and herb identification
- Garde manger (keeper of the food) duties
- Baking, plating and presentation including differences in world cuisine
Apprenticeship Sites
Your apprenticeships will consist of approximately 10 hours per week in rotation between several prestigious venues.*

By completing 240 hours of apprenticeship work divided into four different rotations, you will gain hands-on experience in a variety of foodservice environments. Working 60 hours at each location, you will make important connections in the restaurant industry and gain valuable experience for your resume.
