The Culinary Apprenticeship Certificate is an 8-month intense program designed for aspiring culinary professionals with a passion for food who desire something more than the traditional, classroom-based culinary education program. You will work hands-on in the kitchens of accomplished professional chefs who will provide the tools needed to succeed in the hospitality industry.

Prerequisites
High school diploma or equivalent, working knowledge of computers and access to a computer and the Internet are required.
Students are also required to pass a background check and drug screening, sign a waiver of liability and show proof of health insurance.

Take an online 3D tour of our professional catering kitchen classroom located at KSU Center.
Location
Classes will be held at KSU Center, primarily in our professional catering kitchen classroom.
What You’ll Learn
- Sanitation basics while preparing for the ServSafe® exam
- Industry tools, equipment and food science
- Knife skills
- Dry and moist heat cooking methods
- How to make stocks, soups and sauces
- Meat, poultry, fruits, vegetables and herb identification
- Garde manger (keeper of the food) duties
- Baking, plating and presentation including differences in world cuisine
Apprenticeship Sites
Your apprenticeships will consist of approximately 15 hours per week in rotation between several prestigious venues.*

By completing 420 hours of apprenticeship work divided into four different rotations, you will gain hands-on experience in a variety of food service environments. Working 105 hours at each location, you will make important connections in the restaurant industry and gain valuable experience for your resume.
Chef’s Table
And as a grand finale, you will end the program by participating in an elegant “Chef’s Table” tasting event at the KSU Center. Friends and families, along with university administrators, will gather to sample and discuss dishes created and served by you and your classmates. This exciting event offers the perfect showcase for the talents and skills you will have gained throughout the program.
